Abstract

This project was undertaken to evaluate raw ginger grown on several farms supplying ginger processing factory. As the two most important criteria used by overseas buyers of Australian ginger are how strong is its ginger smell and how is its taste, the aim of this project was to assess these two parameters. This evaluation was done in order to improve the quality and to provide information to aid in the development of new products with improved attributes.
