Abstract

Millets are climate-resilient ancient grains with recognised nutritional and sustainability benefits. This study combined online surveys, focus groups, and consumer testing of millet-based chips, sweet porridges, savoury porridges, and beer products. Results showed that flavour and texture were the major drivers of acceptance, and that consumers were more willing to purchase millet products after tasting them and learning of their health benefits. Social media, websites, blogs, and brand communications were identified as important channels for increasing awareness and consumption of millet-based foods.
